In a large mixing bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well mixed.
Add the rolled oats, ground flaxseed, and a pinch of salt to the bowl. Mix everything together until all ingredients are evenly incorporated.
Fold in the mini chocolate chips, ensuring they are evenly distributed throughout the mixture.
Using your hands, scoop out tablespoon-sized portions of the mixture and roll them into balls. Place each ball on a lined baking sheet or plate.
Once all the mixture has been rolled into balls, refrigerate for at least 30 minutes to firm up.
After chilling, the energy balls are ready to enjoy! Store any leftovers in an airtight container in the refrigerator for up to one week.
