Prepare the Peach Filling: In a small bowl, combine the diced peaches, 2 tablespoons of sugar, and cinnamon. Mix well and set aside to macerate for about 15 minutes.
Make the Dough: In a large mixing bowl, whisk together the flour, baking powder, and salt. In another bowl, mix the melted butter, remaining sugar, egg, milk, and vanilla extract until well combined. Pour this wet mixture into the dry ingredients, stirring gently until just combined.
Prepare the Cruffin Molds: Preheat your oven to 375°F (190°C) and grease a mufftin tin. Roll out the croissant dough into thin rectangles. Cut into 2-3 long strips and layer them, slightly overlapping.
Fill with Peach Mixture: Place a small spoonful of the peach filling at the end of each strip of croissant dough, then roll it up tightly. Tuck the edges in and gently press to seal.
Bake the Cruffins: Place each rolled cruffin into the greased muffin tin. Bake in the preheated oven for 20-25 minutes, or until they are golden brown and puffed up. The aroma will be mouthwatering!
Cool and Dust: Once baked, let the cruffins cool in the tin for 5 minutes before transferring them to a cooling rack. Dust with powdered sugar for a lovely finish.
