Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it with cooking spray.
In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon. Whisk together until well mixed.
In a separate bowl, mix the melted butter, egg, buttermilk, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and gently fold together using a spatula until just combined. Be careful not to overmix; it's okay if the batter is slightly lumpy.
Gently fold in the diced peaches and walnuts (if using).
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Bake in the preheated oven for 18-22 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
