In a blender, combine the sliced peaches and lemon juice. Blend until smooth, creating a peach puree.
In serving glasses, add a scoop of peach sorbet to each glass.
Pour the peach puree over the sorbet, filling each glass about halfway.
Slowly top up each glass with sparkling water or lemon-lime soda, allowing the fizz to mix gently with the puree.
Add ice cubes to the glasses if desired for extra chill.
Garnish with chopped fresh mint leaves for a pop of color and extra freshness.
