In a medium-sized bowl, combine the rolled oats, almond milk, diced peach, honey (or maple syrup), vanilla extract, ground cinnamon, and nutmeg. Stir until well mixed.
Add the Greek yogurt to the mixture and fold it in gently until combined, creating a creamy consistency.
Divide the oat mixture into two jars or airtight containers, ensuring there's enough space in each for additional toppings.
Sprinkle the chopped pecans over the top of each portion.
Cover the containers with lids and refrigerate overnight (or at least for 4-6 hours) to allow the oats to soften and absorb the flavors.
In the morning, give the oats a good stir and taste; adjust sweetness if needed.
Serve chilled, garnished with additional diced peach and fresh mint leaves for a refreshing touch.
