Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the sliced chicken, red and yellow bell peppers, and red onion.
Drizzle the olive oil over the mixture, then add the fajita seasoning, garlic powder, smoked paprika, salt, and pepper. Toss everything together until the chicken and vegetables are evenly coated.
Spread the chicken and vegetable mixture in a single layer on a large baking sheet lined with parchment paper.
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender, stirring halfway through the cooking time.
While the chicken fajitas are baking, warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until soft.
Once the chicken and veggies are done, remove them from the oven and let them rest for a couple of minutes.
To serve, fill each tortilla with the baked chicken and veggie mixture. Add desired toppings such as sour cream, guacamole, shredded cheese, and fresh cilantro.
