Instructions
Prepare the Crust: In a mixing bowl, combine the crushed Oreo cookies with melted butter. Stir until well mixed.
Form the Base: Press the Oreo mixture firmly into the bottom of a 9x9 inch square baking pan to form an even layer. Refrigerate while preparing the filling.
Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.
Add Sugar and Vanilla: Gradually add the powdered sugar and vanilla extract, mixing until well combined and smooth.
Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form.
Fold Mixtures Together: Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Be careful not to deflate the whipped cream.
Incorporate Chopped Oreos: Fold in the chopped Oreo cookies, reserving a few for garnish.
Assemble the Bars: Pour the cheesecake filling over the crust in the baking pan. Smooth the top with a spatula.
Chill: Cover and refrigerate for at least 4 hours or until set (overnight is best).
Decorate & Serve: Once set, remove from the pan and cut into bars. Optionally, top with whipped cream and sprinkle remaining chopped Oreos on top before serving.
