12 oz (340g) spaghetti or linguine
3 large yellow onions, thinly sliced
4 cloves garlic, minced
4 cups vegetable broth
1 teaspoon dried thyme
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 cup grated Gruyère cheese
1 cup grated Parmesan cheese
Salt and pepper to taste
1 tablespoon fresh parsley, chopped (for garnish)

Method
 

In a large pot, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized, about 20-25 minutes.
    Add the minced garlic to the onions and cook for an additional 2 minutes until fragrant.
      Pour in the balsamic vinegar, scraping any brown bits from the bottom of the pot, and let it cook for 1 minute.
        Stir in the vegetable broth, dried thyme, and bring the mixture to a gentle boil.
          Add the spaghetti or linguine to the pot, making sure the pasta is submerged in the broth. Reduce the heat to a simmer and cook according to package directions until al dente, stirring occasionally, about 9-11 minutes.
            Once the pasta is cooked, reduce the heat to low and stir in the Gruyère and Parmesan cheese, mixing until melted and creamy. If desired, adjust seasoning with salt and pepper.
              Allow the pasta to sit for 2-3 minutes until slightly thickened.
                Serve hot, garnished with fresh chopped parsley.
