In a small bowl, whisk together honey, soy sauce, minced garlic, and grated ginger. Set aside.
Season the chicken thighs with salt and pepper on both sides.
Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken thighs and sear for about 5 minutes on each side, or until golden brown.
Pour the honey garlic mixture over the chicken, ensuring it's well coated. Turn the heat to low and let it simmer for 5 minutes.
Add the broccoli and bell pepper slices around the chicken in the skillet. Toss the vegetables gently in the honey garlic sauce to coat them.
Cover the skillet and let it cook on low heat for another 10 minutes, or until the chicken is cooked through and the vegetables are tender.
For a nice glaze, you can broil the dish for an additional 2-3 minutes if desired; just be sure to watch it closely.
Remove from the heat, and sprinkle with sesame seeds and chopped green onions before serving.
