Preheat your oven to 400°F (200°C).
In a large bowl, combine the sliced chicken, sliced bell peppers, sliced onion, and minced garlic.
Add the olive oil, chili powder, cumin, paprika, salt, black pepper, and cayenne pepper (if using). Mix everything together until the chicken and veggies are well coated in the spices.
Transfer the mixture to a large baking sheet or oven-safe pan, spreading it out evenly.
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender, stirring halfway through for even cooking.
Remove from the oven and garnish with freshly chopped cilantro.
Serve warm in tortillas, allowing everyone to make their own fajitas with the cheesy goodness, lettuce, or salsa if desired.
