In a large skillet, heat the olive oil over medium heat. Add the sliced onions, and sauté for about 5 minutes until they start to soften.
Add the sliced yellow squash and zucchini to the skillet, stirring to combine with the onions. Cook for another 6-8 minutes until the vegetables begin to soften.
Sprinkle the garlic powder, dried thyme, salt, and pepper over the vegetables. Stir well to evenly distribute the spices.
Pour in the vegetable broth and balsamic vinegar, then reduce the heat to low, cover with a lid, and simmer for about 10-12 minutes until the squash is tender and has absorbed the flavors.
Taste and adjust seasonings if necessary.
Remove from heat, and transfer the squash and onions to a serving dish. Garnish with fresh chopped parsley before serving.
