Method
In a medium bowl, combine graham cracker crumbs, cocoa powder, and powdered sugar. Mix well.
Add the melted butter and vanilla extract to the dry ingredients, stirring until you achieve a moldable dough.
Using cupcake liners, press about 1 tablespoon of the mixture into the bottom and up the sides of each liner to form cookie cups. Make sure the sides are thicker for stability.
In a separate bowl, mix the peanut butter and mini chocolate chips until well combined. If desired, add cinnamon for an extra holiday flavor.
Spoon the peanut butter mixture into each cookie cup, filling them generously.
Chill the cookie cups in the refrigerator for at least 30 minutes to set.
Once set, garnish with edible decorations of your choice for a festive touch.
