Method
In a large mixing bowl, combine rolled oats, cocoa powder, and salt. Stir until mixed evenly.
In a microwave-safe bowl, combine peanut butter and honey. Microwave for about 30 seconds until warm, then stir to combine.
Add the vanilla extract to the peanut butter mixture and mix well.
Pour the peanut butter mixture over the dry oat mixture. Stir until all the ingredients are well combined and coated.
Fold in the dark chocolate chips, chopped nuts, and shredded coconut (if using).
Line an 8x8 inch baking dish with parchment paper for easy removal. Transfer the mixture to the prepared dish and press it down firmly with a spatula or your hands until it's evenly distributed.
Refrigerate for at least 2 hours to set. Once firm, remove from the dish and cut into squares or bars.
