Cook the egg noodles according to package instructions. Drain and set aside.
In a bowl, mix the soy sauce, hoisin sauce, brown sugar, and cornstarch until smooth. Add the sliced beef and let it marinate for about 15-20 minutes.
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated beef (discard excess marinade) and stir-fry for about 3-4 minutes until browned and cooked through. Remove from the skillet and set aside.
In the same skillet, add the broccoli, red bell pepper, carrot, garlic, and ginger. Stir-fry for about 3-5 minutes until the vegetables are tender but still crisp.
Return the cooked beef to the skillet with the vegetables. Add the cooked noodles and any remaining marinade. Toss everything together and cook for an additional 2-3 minutes to combine the flavors thoroughly.
Remove from heat and stir in the chopped green onions.
Serve hot, garnished with a sprinkle of sesame seeds if desired.
