Prepare Apple Filling:
- In a medium bowl, toss the diced apples with lemon juice, brown sugar, cinnamon, and flour. Set aside to allow the flavors to meld.
Make the Miso Caramel:
- In a saucepan over medium heat, combine granulated sugar and cook until it begins to melt, stirring frequently until it turns a deep amber color.
- Remove from heat and quickly whisk in butter until melted. Slowly add the heavy cream while stirring vigorously. Add miso paste and a pinch of salt, and mix until smooth. Set aside to cool slightly.
Make the Crumble:
- Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking dish.
- In a large bowl, combine flour, rolled oats, brown sugar, baking powder, and salt. Add the cold cubed butter and use your fingers or a pastry cutter to mix until it resembles coarse crumbs.
Assemble the Bars:
- Press half of the crumble mixture evenly into the bottom of the prepared baking dish to form the crust.
- Layer the apple filling evenly over the crust, then pour the miso caramel over the apples, spreading it to cover them.
- Sprinkle the remaining crumble mixture on top to cover the caramel and apples.
Bake:
- Bake in the preheated oven for 25-30 minutes until the topping is golden brown and the apples are bubbly.
- Let the bars cool in the baking dish for at least 15 minutes before slicing into squares.
