Prepare the Cucumbers: Slice the cucumbers in half lengthwise and scoop out the seeds with a small spoon to create boats or cups. Set aside.
Make the Mint Filling: In a mixing bowl, combine the chopped mint leaves, yogurt, lemon juice, olive oil, cumin powder, chili powder, salt, and black pepper. Mix well until all the ingredients are well incorporated.
Fill the Cucumber Cups: Using a spoon, carefully fill each cucumber cup with the mint yogurt mixture, packing it in gently for a beautiful presentation.
Garnish: Sprinkle the crushed roasted peanuts on top of the filled cucumber cups for an added crunch and flavor contrast.
Chill and Serve: Place the cucumber cups on a serving platter and refrigerate for at least 20 minutes to allow the flavors to meld. Serve chilled.
