In a large mixing bowl, combine the Greek yogurt, mayonnaise, lemon juice, minced garlic, smoked paprika, onion powder, dried oregano, salt, and pepper. Mix until smooth to create a marinade.
Place the chicken breasts in the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum tenderness.
Once marinated, remove the chicken from the fridge and place it in a baking dish.
Spread any remaining marinade over the chicken breasts, then sprinkle shredded mozzarella cheese on top.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the cheese is bubbly and golden.
Once done, remove from the oven and let the chicken rest for 5 minutes before slicing.
Garnish with fresh chopped parsley and serve warm.
