Prepare the Cod: Preheat your oven to 375°F (190°C). In a baking dish, season the cod fillets with salt and pepper on both sides.
Assemble the Dish: Pour half of the tomato-basil sauce over the cod, making sure to cover each fillet. If using, place a slice of fresh mozzarella on top of each fillet to melt during baking.
Bake: Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes, until the cod is opaque and flakes easily with a fork.
