Instructions
Begin by cooking the rotini pasta according to the package instructions until al dente. Drain and rinse under cold water to cool.
In a large mixing bowl, combine the cooled pasta, cooked chicken, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
In a small bowl, whisk together olive oil, red wine vinegar (or balsamic vinegar), dried oregano, salt, and pepper to create the dressing.
