Method
Preheat your oven to 400°F (200°C).
In a large baking dish, drizzle 1 tablespoon of olive oil on the bottom.
Place the fish fillets side by side in the baking dish, skin side down.
Drizzle the remaining olive oil over the fillets and season with salt, pepper, paprika, and oregano.
Squeeze the juice of one lemon over the fish and place the lemon slices on top of each fillet.
In a mixing bowl, combine the halved cherry tomatoes, Kalamata olives, minced garlic, and a bit of salt and pepper. Mix well and then pour this mixture over the fish.
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
After 20 minutes, remove the foil and bake for an additional 10 minutes, allowing the top to brown slightly.
Once cooked, remove from the oven and garnish with fresh parsley before serving.
