Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.
Stir in the taco seasoning, ensuring the beef is coated evenly. Add the black beans, corn, and diced tomatoes with green chilies, and mix well. Allow the mixture to heat through for about 3-4 minutes.
Reduce the heat to low and add the softened cream cheese and sour cream to the skillet. Stir until fully combined and smooth.
Add in the shredded cheddar cheese and mix until melted and evenly distributed through the dip.
Remove from heat and sprinkle some chopped green onions on top for color. If desired, add an extra layer of shredded cheddar cheese to the top.
Transfer the dip to a serving dish or keep it in the skillet for a rustic presentation. Serve warm with tortilla chips for dipping.
