Method
In a large mixing bowl, combine the rolled oats, chopped pistachios, chia seeds, matcha powder, and sea salt. Mix well to ensure the dry ingredients are evenly combined.
In a separate bowl, combine the almond butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well blended.
Pour the wet mixture into the dry ingredients and stir until everything is fully incorporated. If using, fold in the shredded coconut for added texture and flavor.
Once the mixture is well combined, use your hands to form small balls, about 1 inch in diameter. If the mixture is too crumbly, add a little more almond butter or honey to help it stick together.
Place the formed energy bites on a baking sheet lined with parchment paper. Chill in the refrigerator for about 30 minutes to firm up.
Once chilled, transfer the energy bites to a storage container. They can be stored in the fridge for up to a week or frozen for longer storage.
