2 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1 cup cherry tomatoes, halved

3 cups fresh spinach

1 cup heavy cream

1 cup grated Parmesan cheese

8 ounces fettuccine pasta

Fresh basil leaves for garnish

Instructions
 

Begin by cooking the fettuccine pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.

      Add the chicken to the skillet and sear for about 5-6 minutes on each side, until cooked through and golden brown. Remove the chicken from the skillet, let it rest for a few minutes, then slice it into strips.

        In the same skillet, add the cherry tomatoes and sauté for 2-3 minutes until they begin to soften. Add the fresh spinach and cook until wilted, about 2 minutes.

          Pour in the heavy cream and stir well, scraping any bits off the bottom of the skillet. Add the grated Parmesan cheese and mix until melted and combined, creating a creamy sauce.

            If the sauce is too thick, add some reserved pasta water to achieve your desired consistency.

              Add the cooked fettuccine to the skillet, tossing to coat it in the sauce. Gently fold the sliced chicken into the pasta.

                Remove from heat and let it sit for a minute, allowing the flavors to meld together.

                  Serve warm, garnished with fresh basil leaves on top.
