In a large mixing bowl, combine the sliced cucumbers, diced tomatoes, and sliced red onion.
In a separate small bowl, whisk together the rice vinegar, olive oil, sugar, minced garlic, dried oregano, salt, and pepper until well mixed.
Pour the marinade over the cucumber and tomato mixture. Toss gently to ensure all the vegetables are well coated.
Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld.
Before serving, give the salad a gentle toss again. Taste and adjust seasoning if necessary.
Transfer the marinated cucumbers and tomatoes to a serving dish and sprinkle with fresh parsley for garnish.
