Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
In a large mixing bowl, combine the rolled oats, chopped pecans, pumpkin seeds, shredded coconut, cinnamon, and sea salt. Mix well to combine.
In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until well combined.
Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
Spread the granola mixture in an even layer on the prepared baking sheet.
Bake in the preheated oven for about 25-30 minutes, stirring halfway through to prevent burning, until the granola is golden brown and fragrant.
Remove from the oven and let it cool completely on the baking sheet. Once cooled, stir in the dried cranberries.
Transfer the granola to an airtight container and store it in a cool place.
