Melt the Coating: In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until smooth and fully melted.
Dip the Sticks: Dip one end of each lollipop stick into the melted chocolate, then insert it into the center of each cake ball slightly. This helps the stick stay in place.
Coat the Cake Pops: Dip each cake pop into the melted chocolate, allowing any excess to drip off. Immediately sprinkle with extra Tajin for a zesty finish. Place the pops back on the parchment-lined baking sheet to set.
Let them Set: Once all pops are coated, refrigerate them for another 15-20 minutes until the chocolate coating is firm.
