Method
Rinse the glutinous rice several times under cold water until the water runs clear. Soak it in water for at least 4 hours or overnight.
Drain the soaked rice and place it in a steamer lined with cheesecloth or a clean kitchen towel. Steam over boiling water for about 30-40 minutes until the rice is translucent and tender.
While the rice is steaming, prepare the coconut sauce. In a saucepan over medium heat, combine coconut milk, sugar, and salt. Stir until the sugar has dissolved, and do not let it boil.
Once the rice is done steaming, transfer it to a large bowl. Pour about 1 cup of the coconut sauce over the hot sticky rice. Mix well and let it sit for about 15-20 minutes to allow the rice to absorb the sauce.
To serve, mold the sticky rice into small portions using a scoop or your hands. Place each portion onto a serving plate.
Top each rice portion with slices of fresh mango and drizzle with more coconut sauce on top.
Sprinkle with toasted sesame seeds and cooked mung beans if using, for an extra crunch.
Garnish with fresh mint leaves for a pop of color and flavor.
