In a mixing bowl, whisk together the coconut milk, maple syrup, vanilla extract, and a pinch of salt until well combined.
Stir in the chia seeds, ensuring they are evenly distributed throughout the mixture.
Cover the bowl and refrigerate for at least 4 hours, or overnight, allowing the chia seeds to expand and create a pudding-like consistency.
Once the chia pudding has set, give it a good stir to break up any clumps of chia seeds.
In serving glasses, layer the chia pudding with the diced mango, creating a beautiful streak of yellow and white.
Top with additional mango pieces and a sprig of fresh mint for garnish just before serving.
