In a large mixing bowl, combine the olive oil, lemon juice, lemon zest, smoked paprika, garlic powder, onion powder, and dried oregano. Mix well to create a marinade.
Season the chicken thighs generously with salt and black pepper, then add them to the marinade. Toss until the chicken is well coated. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
Place the marinated chicken thighs skin-side up on a baking sheet lined with parchment paper or in a large oven-safe skillet.
Roast in the preheated oven for about 35-40 minutes, or until the chicken skin is crispy and the internal temperature reaches 165°F (75°C).
Once cooked, remove the chicken from the oven and let it rest for 5 minutes before serving.
Garnish with freshly chopped parsley for a pop of color and added flavor.
