In a mixing bowl, whisk together olive oil, lemon zest and juice, minced garlic, chopped rosemary, chopped thyme, Dijon mustard, salt, and pepper until well combined.
Place the chicken breasts in a large resealable plastic bag or a glass dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to 4 hours for more flavor).
Preheat your grill to medium-high heat. Remove the chicken from the marinade, shaking off excess liquid.
Grill the chicken for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C).
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
Serve the grilled chicken warm, garnished with lemon slices and fresh herbs.
