In a medium bowl, combine the rolled oats and almond milk, stirring until well mixed.
Add the Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, vanilla extract, cinnamon, and salt. Mix until all ingredients are thoroughly combined.
Gently fold in the fresh blueberries, ensuring they are evenly distributed throughout the mixture.
Transfer the oat mixture into a jar or airtight container with a lid.
Refrigerate overnight (or at least for 4-6 hours) to allow the oats to absorb the liquid and flavors.
In the morning, give the oats a good stir. If the mixture is too thick, add a splash of milk until you reach your desired consistency.
Serve topped with additional fresh blueberries and a drizzle of honey or maple syrup if desired.
