Method
In a medium bowl or a large mason jar, combine the rolled oats, almond milk, Greek yogurt, lemon zest, lemon juice, honey or maple syrup, vanilla extract, and salt.
Stir the mixture well until all the ingredients are thoroughly combined. Make sure the oats are coated with the liquid.
Gently fold in the fresh blueberries, saving a few for topping later.
Cover the bowl or seal the jar with a lid and refrigerate overnight (or at least for 4-6 hours) to allow the oats to soak up the liquid and flavors.
In the morning, give the oats a good stir. If they are too thick, you can add a splash more of almond milk to reach your desired consistency.
Serve the overnight oats in bowls or keep them in the jar for a grab-and-go breakfast. Top with additional blueberries and a drizzle of honey or maple syrup if desired.
