In a large mixing bowl, combine the ground beef, panko breadcrumbs, green onions, minced garlic, grated ginger, soy sauce, brown sugar, sesame oil, gochujang, and the beaten egg.
Mix all the ingredients with your hands (or a fork) until well incorporated, being careful not to overmix.
Preheat your oven to 400°F (200°C).
Shape the meat mixture into small meatballs, about 1 inch in diameter, and place them on a lined baking sheet.
Bake in the preheated oven for 15-20 minutes or until golden brown and cooked through.
Optional: For a sticky glaze, you can brush additional soy sauce mixed with honey over the meatballs during the last 5 minutes of baking.
Remove meatballs from the oven and let them cool slightly.
Garnish with sesame seeds and extra green onions before serving.
