Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
In a large skillet over medium heat, cook the ground turkey (or beef) until browned, about 5-7 minutes. Drain excess fat if necessary.
Add the black beans, corn, taco seasoning, and canned diced tomatoes to the skillet. Stir well to combine and allow the mixture to heat through for about 3-4 minutes.
Layer half of the crushed tortilla chips on the bottom of the prepared baking dish. (Tip: Use a mix of fine and larger pieces for texture!)
Spread half of the meat and bean mixture over the tortilla chips, then add half of the shredded cheese on top.
Spoon the sour cream and salsa evenly over the cheese layer.
Repeat the layers with the remaining tortilla chips, meat mixture, and top with the last of the cheese.
Cover the baking dish with foil and bake for 20 minutes. Afterward, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
Once out of the oven, let it cool for a few minutes before garnishing with fresh cilantro and diced avocado.
