In a small bowl, whisk together honey, soy sauce, minced garlic, lime juice, and grated ginger. Set aside.
In a skillet over medium-high heat, add olive oil. Once hot, add the shrimp and season with salt and pepper. Cook for 2-3 minutes until shrimp start to turn pink.
Pour the honey garlic sauce over the shrimp in the skillet, stirring to coat well. Continue to cook for another 2-3 minutes until the shrimp are cooked through and coated in the sauce. Remove from heat.
While the shrimp are cooking, warm the tortillas in a separate pan over medium heat or in the microwave for about 15 seconds until pliable.
Assemble the tacos by placing a generous portion of shrimp on each tortilla, followed by shredded cabbage, diced tomatoes, and a sprinkle of fresh cilantro.
Serve with lime wedges on the side for added zest.
