If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
In a medium bowl, whisk together honey, soy sauce, minced garlic, grated ginger, and olive oil until well combined.
Add the shrimp to the marinade and let them marinate for at least 20 minutes (or up to 1 hour in the refrigerator for more flavor).
Preheat your grill to medium-high heat.
Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp.
Grill the skewers for about 2-3 minutes on each side, or until the shrimp are opaque and cooked through. Be careful not to overcook them!
Once cooked, remove the skewers from the grill and sprinkle with sesame seeds and chopped green onions for garnish.
Serve immediately with additional honey sauce on the side, if desired.
