honey

Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the diced sweet potatoes, olive oil, smoked paprika, thyme, salt, and pepper. Toss to coat the potatoes evenly.
Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 20 minutes, stirring halfway through for even browning.
Meanwhile, in a skillet over medium heat, add the sliced sausage. Cook until browned and heated through, about 5-7 minutes.
Add the minced garlic to the sausage in the skillet, and sauté for 1-2 minutes until fragrant.
Drizzle the honey over the sausage and garlic mixture, stirring to combine. Cook for another 2-3 minutes until the sauce thickens slightly.
Once the sweet potatoes are tender and crispy, remove them from the oven and add them to the skillet with the sausage.
Toss everything together until the sweet potatoes are well coated in the honey garlic sauce.
Serve warm, garnished with fresh parsley for a pop of color and freshness.
