Method
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the honey, olive oil, minced garlic, rosemary, salt, and black pepper. Mix well until combined.
Add the carrot sticks to the bowl and toss them until they are evenly coated with the honey-garlic mixture.
Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.
Roast the carrots in the preheated oven for 25-30 minutes, shaking the pan halfway through, until they are tender and caramelized.
Once done, remove them from the oven and let them cool slightly.
Transfer the carrots to a serving dish and sprinkle with sesame seeds if desired, for added texture.
