Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the honey, olive oil, minced garlic, thyme, salt, and pepper. If using, add balsamic vinegar to the mixture.
Add the baby carrots to the bowl and toss them well until they are evenly coated in the honey garlic mixture.
Arrange the coated carrots in a single layer on a baking sheet lined with parchment paper to prevent sticking.
Roast the carrots in the preheated oven for 25-30 minutes, flipping them halfway through to ensure even cooking and browning. Carrots should be tender and slightly caramelized when done.
Once roasted, remove the carrots from the oven and sprinkle with additional salt, pepper, and chopped parsley before serving.
