Preheat your oven to 425°F (220°C).
In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
Spread the cauliflower on a baking sheet lined with parchment paper in a single layer. Bake in the preheated oven for about 25 minutes, turning halfway until golden brown and crispy.
In a small bowl, mix together honey and chipotle sauce. Once the cauliflower is done roasting, drizzle this sauce over the florets and toss gently to coat. Return to the oven for an additional 5 minutes to set the glaze.
Warm the whole wheat tortillas slightly in a dry skillet or microwave to make them pliable.
To assemble the wraps, place a handful of shredded lettuce in the center of each tortilla. Top with roasted honey chipotle cauliflower, diced tomatoes, fresh cilantro, and avocado slices.
Fold in the sides of the tortilla and then roll it up tightly from the bottom to secure the filling.
Slice the wraps in half and serve with lime wedges on the side for added zest.
