Method
In a small bowl, combine warm milk and yeast. Let it sit for about 5 minutes until foamy.
In a large mixing bowl, stir together flour, honey, melted butter, salt, and eggs. Once the yeast mixture is foamy, add it to the bowl.
Mix until the dough comes together, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
Once risen, punch down the dough and roll it out on a floured surface into a rectangle (about 16x12 inches).
Spread melted butter on the dough, then sprinkle with brown sugar, cinnamon, and chopped walnuts (if using).
Starting from one long side, carefully roll the dough into a tight log. Pinch the seam to seal.
Cut the log into 12 equal rolls and place them in a greased baking dish. Cover and let rise for another 30 minutes.
Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes until golden brown.
While they are baking, prepare the icing by mixing powdered sugar with 1 tablespoon of milk until smooth.
Once the rolls are done, remove them from the oven and drizzle with icing while still warm.
