Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Add the diced carrots to the pot and sauté for another 5 minutes, stirring occasionally.
Sprinkle in the ground cumin, coriander, and smoked paprika, allowing the spices to toast slightly in the pan for about 1 minute.
Add the rinsed red lentils and vegetable broth, bringing the mixture to a boil.
Once boiling, reduce the heat to a simmer and cover the pot. Cook for about 20-25 minutes, or until the lentils and carrots are tender.
Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches, being cautious of the hot liquid.
Return the soup to the pot on low heat, adjusting seasoning with salt, pepper, and a squeeze of lemon juice to brighten the flavors.
Serve hot, garnished with fresh cilantro or parsley.
