Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
Add the minced garlic and continue cooking for another minute until fragrant.
Toss in the ground beef, breaking it up with a spoon. Cook until browned, about 5-7 minutes; drain any excess fat if necessary.
Stir in the diced sweet potato and add one tablespoon of water to the skillet. Cover and cook for about 10 minutes, or until the sweet potatoes are tender, stirring occasionally.
Once the sweet potatoes are softened, add the diced zucchini and bell pepper to the skillet.
Sprinkle in the cumin, smoked paprika, chili powder, salt, and pepper. Stir everything together and continue to cook for an additional 5-7 minutes until the vegetables are tender and flavors are combined.
Taste and adjust seasoning if necessary.
