In a large mixing bowl, combine the Greek yogurt, coconut milk, honey (or agave), vanilla extract, lemon juice, and a pinch of sea salt.
Using a whisk, beat the mixture until it’s smooth and well combined. Ensure there are no lumps from the yogurt.
Taste the mixture, and adjust sweetness if necessary by adding more honey or agave.
Pour the yogurt mixture into an ice cream maker and churn according to the manufacturer's instructions (usually about 20-25 minutes) until it thickens to a soft-serve consistency.
During the last few minutes of churning, gently fold in the mixed berries, ensuring they are evenly distributed.
Transfer the ice cream to an airtight container and smooth the top with a spatula.
Freeze the ice cream for at least 2 hours, or until firm enough to scoop.
Once ready to serve, allow it to sit at room temperature for about 5-10 minutes to soften slightly before scooping.
