In a food processor, combine the chickpeas, tahini, lemon juice, minced garlic, olive oil, cumin, and salt.
Blend the mixture until it's smooth and creamy. If the hummus is too thick, add a little water or more olive oil to reach your desired consistency.
Transfer the hummus to a shallow serving dish and create a well in the center using the back of a spoon.
Layer the cherry tomatoes, diced cucumber, red onion, and Kalamata olives in the well of the hummus.
Sprinkle crumbled feta cheese evenly over the top of the loaded hummus.
Drizzle a little more olive oil over the entire dish for added flavor and richness.
Garnish with fresh parsley leaves for a pop of color.
Serve the Greek loaded hummus with warm pita bread or fresh vegetable sticks.
