In a medium mixing bowl, whisk together the grated ginger, lime zest, lime juice, honey, soy sauce, minced garlic, sesame oil, and a pinch of salt and pepper until well combined.
Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over the chicken, ensuring that each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
Preheat your grill to medium-high heat (about 400°F/200°C).
Remove the chicken from the marinade, letting any excess drip off. Discard the marinade.
Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C), and the chicken has nice grill marks.
Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
Slice the chicken and serve it on a platter, garnished with chopped cilantro for a fresh touch.
