Preheat your oven to 400°F (200°C).
In a large mixing bowl, toss the halved Brussels sprouts with olive oil, minced garlic, salt, black pepper, and red pepper flakes (if using). Make sure each sprout is well-coated.
Spread the seasoned Brussels sprouts onto a baking sheet in a single layer for even roasting.
Roast in the preheated oven for about 20 minutes. After 20 minutes, remove the baking sheet and sprinkle the grated Parmesan cheese evenly over the Brussels sprouts.
Return to the oven and roast for an additional 10-15 minutes, or until the Brussels sprouts are golden brown and crispy, and the cheese is melted and bubbly.
Once done, remove from the oven and drizzle balsamic vinegar over the sprouts for added flavor.
Garnish with fresh chopped parsley before serving.
