Preheat the oven to 425°F (220°C). In a bowl, toss the diced potatoes with olive oil, smoked paprika, salt, and pepper. Spread them on a baking sheet in a single layer.
Place the baking sheet in the oven and bake for about 25-30 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through.
While the potatoes are baking, heat a large skillet over medium-high heat. Add 2 tablespoons of butter and let it melt.
Once the butter is bubbling, add the steak cubes in a single layer. Season them with salt and pepper. Sear for about 2-3 minutes on each side, until browned and cooked to your desired level of doneness.
Reduce the heat to medium. Add the minced garlic and the remaining 2 tablespoons of butter to the skillet, stirring to coat the steak bites. Cook for an additional 1-2 minutes until the garlic is fragrant and the butter has combined with the steak.
Remove the skillet from heat and sprinkle the fresh parsley over the steak bites, tossing to combine.
Once the potatoes are done, remove them from the oven and transfer to a serving platter alongside the garlic butter steak bites. Serve with lemon wedges on the side for an extra zing.
