Preheat your grill to medium-high heat or preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the diced potatoes with half of the melted butter, minced garlic, chopped rosemary, thyme, salt, and black pepper. Toss until the potatoes are well coated.
Cut four pieces of aluminum foil, each approximately 12x12 inches.
On each piece of foil, place an equal amount of the seasoned potatoes in the center, creating a small pile.
Add an equal portion of the steak pieces on top of the potatoes. Drizzle the remaining melted butter over the steak and sprinkle with additional salt and pepper.
Nestle cherry tomato halves around the steak and potatoes.
Bring the sides of the foil up to the center and fold over to seal the packets tightly. Ensure they are well sealed to prevent leaking.
Place the foil packets on the preheated grill or in the oven. Cook for 20-25 minutes, until the steak is cooked to your liking and potatoes are tender.
Carefully remove the packets from the heat and let them sit for a few minutes before opening—be cautious of steam.
Open the packets, gently stir the contents, and garnish with fresh parsley before serving.
