Method
Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan or line it with parchment paper for easier removal.
In a large mixing bowl, combine the grated zucchini, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Mix well until the ingredients are thoroughly combined.
In a separate bowl, sift together the cocoa powder, flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.
Fold in the chocolate chips and chopped nuts (if using) until evenly distributed in the batter.
Pour the batter into the prepared baking pan and spread it evenly with a spatula.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean (a few crumbs are okay, but it shouldn't be wet).
Allow the brownies to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely before slicing.
Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 16 brownies
- Presentation Tips: Cut the brownies into squares and dust with additional cocoa powder or powdered sugar. Serve them warm with a scoop of vanilla ice cream on the side for a delightful dessert!
